Barley Salad

  • 1 cup Wel-Pac Pressed Barley Oshi Mugi
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped red onion
  • 1 cup tomatoes, diced to 3/4 inch cube
  • 1 clove garlic, minced
  • 1/4 cup Dynasty Thai Peanut Satay Sauce
  • 2 tablespoon vinegar
  • 1/4 teaspoon black pepper
  • 1/4 cup minced parsley

Combine 1 cup pressed barley and 3 cups water in medium saucepan. Bring to a boil. Reduce heat to low. Cover and simmer 20 minutes. Stir occasionally; drain well after done, set aside to cool. Toss all ingredient with cooled barley until well mixed. Keep in the refrigerator until ready to serve.

Makes 5 servings. 1 cup each.

Per serving: 134 calories, 3.5 g protein, 2 g fat, 24.5 g carbohydrate, 163 mg sodium, no cholesterol.
