Combine 1 cup pressed barley and 3 cups water in medium saucepan. Bring to a boil. Reduce heat to low. Cover and simmer 20 minutes. Stir occasionally; drain well after done, set aside to cool. Toss all ingredient with cooled barley until well mixed. Keep in the refrigerator until ready to serve.
Makes 5 servings. 1 cup each.
