Whisk together flour and salt in a large mixing bowl, slowly add ?? - ?? cup water to form dough until the bottom of the bowl has no more dry flour remained. Lightly dust the cutting board with ?? cup flour. Transfer the dough to the cutting board and knead for 5 minutes until dough is no longer sticky. Cover the kneaded dough in room temperature with a lightly moistened cloth and let it rest for 25-30 minutes. On the same work surface, divide the rested dough into 4 equal portions, work 1 portion at a time and keep the rest covered. Roll the dough into an evenly thick circle (about 1/8 inch thick) and brush it with sesame oil, sprinkle with ?? cup scallions on the oiled surface and roll tightly into a cylinder. Pull both ends of the cylinder together, then roll again into a ?? inch thick pancake. Repeat for the remaining dough and add extra flour as needed between rolling to prevent sticking. Heat a large frying pan, preferably nonstick, over medium heat. Lightly coat inside of pan with cooking spray. Gently place the pancake in the pan and cook for 2 minutes or until golden brown on both sides. Remove from pan and serve hot, serve with Dynasty Plum sauce for dipping if desired.
